Rising egg prices are forcing some area restaurants to consider menu increases

The rising price of eggs presents challenges for consumers and restaurant owners alike. The Greenville News reported on how local restaurants are responding to the increases spurred by an avian flu outbreak, a glut of consumption during the holidays and higher production costs.

A.J. Jackson of The News spoke to Furman University’s Jason Jones for his insights. Jones, chair and professor of economics, said the present egg quandary illustrates the basic laws of supply and demand. “The higher price avoids shortages in the stores,” he said. “Without the higher price, the same number of people would have wanted the smaller number of eggs available.” The good news? Jones, like agricultural industry watchers, believes egg prices will come down by mid-2023.
