{"id":37060,"date":"2025-04-07T14:25:40","date_gmt":"2025-04-07T18:25:40","guid":{"rendered":"https:\/\/www.furman.edu\/news\/?p=37060"},"modified":"2025-04-07T14:26:56","modified_gmt":"2025-04-07T18:26:56","slug":"international-food-festival-serves-up-culture-and-community","status":"publish","type":"post","link":"https:\/\/www.furman.edu\/news\/international-food-festival-serves-up-culture-and-community\/","title":{"rendered":"International Food Festival Serves Up Culture and Community"},"content":{"rendered":"<p>At Furman University, the International Food Festival has become more than a meal \u2013 it\u2019s a campus tradition rooted in collaboration, culture and culinary creativity.<\/p>\n<p>\u201cThis used to be a luncheon,\u201d said Tony McGuirt, director of auxiliary services at Furman, recalling the festival\u2019s modest beginnings in the Watkins Room of the Trone Student Center on campus. \u201cThey brought in food from local, international restaurants and it grew so large that people would wait in line and we would run out of food.\u201d<\/p>\n<p>Today, it\u2019s a full-blown campus event that feeds more than 1,500 people and showcases dishes from 40 countries. Led by Bon Appetit Executive Chef Gustavo Sanchez-Salazar, the dining team works closely with student organizations like the Furman University International Student Association (FUISA) to bring authentic international recipes to life.<\/p>\n<p>\u201cWe\u2019re a scratch-made kitchen,\u201d Sanchez-Salazar said. \u201cYou&#8217;re not seeing a lot of things from freezers or cans. We put our heart into the dishes.\u201d<\/p>\n<p>The planning for the International Food Festival begins weeks in advance. DD Nayreau \u201925, member of FUISA, coordinates with Alex Akulli, associate director of international student engagement, to gather a list of countries represented by Furman\u2019s international students.<\/p>\n<p>\u201cWe work with the dining staff to make the whole thing a success,\u201d said Nayreau. \u201cWe advertise it, decorate the dining hall with flags and put together an international playlist for the day.\u201d<\/p>\n<p>The students also submit recipes \u2013 some handed down from generation to generation \u2013 which the chefs do their best to recreate with local and specialty-sourced ingredients. Sanchez-Salazar noted the challenge of finding certain spices and ingredients in Greenville: \u201cI have to order some of them from overseas. I remember searching for a specific rice one year and finally found it on Amazon and had it shipped from another country,\u201d he said.<\/p>\n<p>Nayreau fondly remembers past hits like dumplings, tamales, tres leches cake, and horchata. \u201cIt\u2019s really meaningful,\u201d she said. \u201cStudents come up to us after and tell us how much they enjoyed a dish \u2013 it tastes like home.\u201d<\/p>\n<p>For McGuirt, the biggest win is the joy it sparks across campus. \u201cIt\u2019s a learning experience. Students who aren\u2019t even from those cultures are trying new things and coming back asking for more.\u201d<\/p>\n<p>As much as the food fuels the event, the festival\u2019s true strength lies in its ability to connect.<\/p>\n<p>\u201cIt bridges gaps,\u201d said David McMillan, director of operations for Bon Appetit. \u201cIt\u2019s a celebration of identity, of discovery \u2013 and most of all, it brings everyone to the table.\u201d<\/p>\n<p>The Furman University International Food Festival will take place from on Friday, April 11, from 11 a.m.-2 p.m. in the Daniel Dining Hall.
