  • Course Syllabus for Just Eating: Sustainable Food Practices May Experience

      Description: This course explores three food practices that seek to optimize personal and environmental health: organic agriculture and eating; vegetarian or low meat diets; and local agriculture and diets. Our purpose is to discover if these are really beneficial to the environment, the individual and society. Further, after trying to answer the first question, the second purpose of the class is to develop individual food ethos, with each person deciding his/her level of commitment to eating in a sustainable manner. The class conducts a rigorous examination through reading and written responses, movies, speakers, visiting local farms and markets and hands-on shopping and preparing meals.

  • Course Syllabus for Environmental Writing and Ecocriticism

      Course for which contribution is used: ENG 416 Environmental Writing and Ecocriticism

      Description: Though the course will have early on a discussion of the "georgic," a literary genre that focuses on agricultural production, the main focus on "food" comes late in the course when we will discuss consumption and garbage (discussed with a Marxist slant in Gone Tomorrow), the relationship between pesticides and fertilizers and cancer (in the novel Gain), and the poor quality of tomatoes and the impoverished lives of those who help produce tomatoes in Florida (in the book Tomatoland).

  • Course Syllabus for Current Issues in Public Health May Experience 2012

      Course for which contribution is used: HSC-151

      Description: The purpose of this course is topical investigation of the environmental and social components of health in Greenville County. This course brings a systems approach to the multi-faceted and diverse applications of environmental health at the local community scale. Integrating sustainability and public health, this course includes field trips, class discussions, documentaries, and guest speakers, exploring the topics of water/air quality, sustainable agriculture, waste management, and environmental justice. This is an active and participatory classroom experience.
